I sneak stuff into my kids food all of the time- but it’s not really being sneaky because after they tell me how much they love it I tell them what was in it! One of the ways I use kale or spinach is in pancakes and waffles.
Incredible Hulk Waffles (or pancakes)
Your own pancake mix or recipe or you can follow my jumbled one below.
Make it in the blender and blend in a couple handfuls of spinach or kale. It doesn’t change the taste just the color. 🙂
My pancakes or waffles:
A staple in our house is Pamela’s gluten free baking mix. It is easy and I can add stuff to it without changing the texture.
3 eggs (I like to make them high protein)
1 cup Pamela’s gluten free mix
2 T Coconut sugar
2 T coconut or olive oil
2 T ground flax
Dash sea salt
1/2 a banana
Ground millet or quinoa (if I hand this I add a couple tablespoons as well)
Handfull of greens
Enough milk to make it batter like.
Fry in coconut oil or waffle iron. We always add chocolate chips to our pancakes and top with organic butter and a little raw honey.
