I’m so excited about the 2017 CSA season and all the fabulous veggies! I love trying new recipes and experimenting with those unusual veggies that we sometimes find in our boxes…lol. And I really love trying new dishes with common veggies that I’ve eaten all my life. That’s one reason I was so excited to find a recipe for cauliflower crust pizza. I discovered it because my family was trying to eat low carb, but we really missed pizza. I decided to give it a try and WOW!! It’s delicious!! I can honestly say that we love it, and even my “meat and potato” hubby, who has NEVER liked anything with cauliflower in it, LOVES it!! Truthfully, lets face it, all that bread in traditional pizza can’t be good for you!
And, the good news is that it is really pretty easy to make! Give it a try and let me know what you think!
1 large head cauliflower
2 cups Mozzarella cheese (plus extra for toppings)
2 Tbsp Almond or Coconut Flour
3/4 c grated Parmesan Cheese
salt, pepper, onion powder, basil to taste
Toppings of choice
Grate the cauliflower into cauliflower rice in a VitaMixer or food processor (It will literally look like rice). I cut the heads and put them in VitaMixer a few at a time. Then, in a large bowl, mix all the ingredients together. Place parchment paper on two baking sheets and divide mixture, putting half on each sheet. Spread the cauliflower mixture to the ends of the baking sheets, pressing down to flatten into thin smooth surface ( making large rectangular pizza crusts). Bake at 425 until tops are lightly browned (around 20-25 minutes). Remove from oven and top with pizza sauce, mozzarella cheese, and toppings of your choice. Return to oven and cook till toppings are done…. I usually put my on broil for a couple of minutes because we like ours a little browned!
There are several cauliflower pizza crust recipes on the internet. I sort of combined some till I found the perfect one for me where I didn’t have to cook the cauliflower first. Go ahead, give it a try… I think you’ll be glad you did!!
