There’s a leek in my box!!!

Actually, there were 3 leeks in my box!!  I know it is middle of the summer and not “soup weather” but…. I thought I would post a soup recipe anyway.  Some people swear off soups for the summer completely, but I love soups on a rainy day.  I found a great recipe for my next rainy day meal.

It uses both our cauliflower and our leeks.  You can swap out the cauliflower for potatoes if you like, but that makes it a little less healthy.  Some people (including myself) get a little scared off of cauliflower because of the smell when it is cooking.  In fact when I make cauliflower alfredo sauce (recipe below) I have to boil my cauliflower in the beginning of the day and wait a few hours before I finish it up, simply because it smells up my house.  After smelling cauliflower cook all day, my family will NOT eat it for dinner.

Something else that I came across in my searching for recipes was Creamed Leeks.  I had never heard of that, but when the blog talked about pairing it with a steak or fish, that made perfect sense.  And true to my nature of SIMPLE this recipe seems like a winner.

THIS is what I am making this week.  I am soooooo excited for this new recipe I found. #1 it includes Sriracha #2 it includes maple syrup (both are top of this sugar-free/grain-free girls list) and #3 my new best friend Cauliflower.
