After four years hosting a Herb and Plow CSA drop-off location, I sometimes find myself looking for new and creative ways to prepare all the yummy fruits and veggies, and I try to share some of my favorites on this blog. Over the years I’ve shared okra recipes, squash recipes, watermelon salad recipes, apple salsa and apple flower recipes, onion recipes, kale recipes, broccoli and carrot recipes, and recipes for just about every fruit and vegetable we’ve gotten in our weekly boxes. Some have been unusual, some quick and easy, and some more complicated, and often I find myself trying to offer recipes with options to prepare our food in ways we might not have ever considered…. and I almost always try to make suggestions to help you use as many veggies each week as possible! This week, I’ve been thinking about our boxes the last few weeks and the abundance of greens, so today I just want to celebrate the delicious and nutritious good ole SALAD !! It really is a fabulous way to use so many of those veggies all in one easy dish.
Throw It All In Salad
Lettuce – washed and torn into bite sized pieces (any variety that happens to be in our shares)
Kale – washed and torn into bite sized pieces
Chopped bell peppers (green, yellow, red, purple, or orange)
Cilantro leaves (adds great flavor!)
Grated raw beets (yes, you can eat raw beets and they are oh, so sweet and a delicious addition)
**Continue by adding any other veggies we get each week – summer squash, zucchini, tomatoes, etc…
Top with almonds, or nuts of your choice
Added chopped chicken (or meat of choice) if desired
**other topping suggestions – garbanzo beans, kidney beans, peas, feta cheese, dried cranberries, etc….
Drizzle with favorite dressing and enjoy a HEALTHY, RAW veggie dish that will supercharge your body!
So, don’t let those veggies and greens go to waste, make yourself a big salad, and reap the benefits of eating raw !!
