Zucchini Noodles

Many of you might have owned one for quite a while, but I just purchased a veggie spiral noodle gadget and I’m in LOVE !! Mine is just a small handheld model because I wanted to try out the concept before I invested in a fancier version, but now that’s on my must have list! If you don’t have one, you can find hand held models like mine for $15 or less. Anyway, you can use them with multiple veggies and can add any toppings you like (spaghetti sauce, browned butter & mizithra cheese, etc…). I’ve been using our zucchini from the CSA to make the following yummy recipe…

Zucchini Noodles with Feta Cheese

2-3 lg. Zucchini (made into spiral Noodles)

Butter

Oil (any light oil – coconut, sunflower, light olive oil)

Salt & pepper

Trader Joe’s Everyday Seasoning (or seasoning of choice)

Heat a tablespoon of oil and a tablespoon of butter in large pan. Add just enough water to cover bottom of pan. Add zucchini spiral Noodles and seasonings. Toss and cook over med to high until slightly tender, tossing often. Do not over cook. Add a little more butter if desired. Transfer to serving plate and top with feta cheese.
